COCKBURN'S PORT
Ruby Ports such as Cockburn’s Fine Ruby are intense, powerful full-bodied wines that show the fresh characteristics of young port. Aged in large wooden vats for 2-3 years in the warmer climate of the Douro Valley, Ruby Port is less exposed to oak and air and retains the deep ruby color and strong, fruity characteristics of youth.

Cockburn’s Fine Ruby is a blend of young wines from various years, aged for three years in wood casks and bottled after filtration. With rich, full-bodied flavors of raspberry, plum and spice, it retains the red color and fruit flavor of youth, and is ready to drink when bottled, offering a rich, fruity, sweet taste. |
 |
People have shared in the enjoyment of fine port wines for centuries. With its complexity and intensity of flavors, perhaps no other wine in the world so completely rounds out an evening of fine food and conversation.

Tasters Notes: Laid-back, rather complex aromas of black raspberry, maple syrup and golden raisins seem midway between ruby and tawny. Smooth, nicely concentrated and rich; the maple syrup note repeats in the mouth but is complemented by fresh berry flavors. Finishes slightly fiery but long, with a suggestion of raisin (Stephen Tanzer - rated this an 87 - Very Good to Excellant)*
Fine Ruby pairs well with blue veined cheeses, rich chocolate desserts especially with raspberry sauce or simply squares of dark chocolate and toasted walnuts. Port can last for 3-4 months once opened. Keep corked and out of the sun for longer enjoyment.
